Tofu Scramble Breakfast Pockets



Ingredients
  • 1 box puff pastry, many brands are accidentally vegan
  • 2 cups medium-firm tofu, crumbled
  • 1/2 cup onion, finely diced
  • 1 1/2 cups mushroom, chopped
  • 1/2 cup tomato, finely diced
  • 1/2 tsp garlic, minced
  • 1/4 tsp onion salt
  • 1/4 tsp turmeric, optional for color
  • Dash black pepper
  • Pinch Indian black salt, optional for eggy flavor

Instructions
  1. Preheat oven to 350 degrees F. the drained and washed black beans with 1 cup of water in a blender until you have a smooth puree.
  2. Defrost your puff pastry according to package instructions.
  3. Preheat your oven to 400 degrees.
  4. Heat a large frying pan over medium heat and crumble your tofu.
  5. Add the chopped onions, garlic and let cook until onions have cooked down.
  6. Add the mushrooms, tomato and seasonings and let cook for a few more minutes until the mushrooms are fully cooked.
